Not always. …. Why Fresh Isn't Always Superior • Nutrient Loss During Travel: Produce starts breaking down and losing vitamins (like Vitamin C and B vitamins) the moment it is harvested. Supermarket produce can travel 1,500 miles or sit in storage for up to two weeks before you buy it. • Early Harvesting: Many fresh vegetables are picked before they reach peak ripeness so they survive shipping, meaning they never fully develop their maximum nutrient or flavor profile. • Refrigeration Decay: Research highlights that certain fresh items—like spinach, green beans, or carrots—can lose a massive percentage of their water-soluble vitamins within just a few days in the fridge. When Frozen or Canned Alternatives Win • Peak-Time Freezing: Frozen vegetables are typically picked at peak ripeness and flash-frozen within hours, which locks in vitamins, minerals, and antioxidants. In many cases, frozen options contain more nutrients than "fresh" alternatives that have aged on a shelf. • Cost and Convenience: Frozen and canned foods have a much longer shelf life, produce less food waste, and are generally cheaper—especially when buying out-of-season produce. • Canned Considerations: Canned vegetables are also preserved right after harvest, though the high-heat canning process can reduce some heat-sensitive vitamins and added sodium can be a concern (which you can fix by rinsing).
