La Chamade was founded in Naples in 1994: did you know that a French friend of the family, having fallen in love with pizza, suggested ‘La Chamade’ as a name for Giovanni, Gennaro's father's project (Naples, Milan, Licola, Vasto...and finally Nice)? Gennaro came to the French Riviera to share the same expertise and love for pizza that he learned in the pizzeria founded by his father. When it comes to ingredients for the toppings, Gennaro and Ilaria favour typical products from Campania, selected from the best producers, as well as products from other regions of Italy.

But it's the pizza dough that's the real star! First of all, the flour: type 1 (corresponding to type 110) obtained from soft wheat grains grown in Italy using sustainable farming techniques and stone-ground then the dough is kneaded with the right amount of flour, water, yeast and salt. Finally, Gennaro leaves the dough to rise for 24 hours. The result: a pizza that is tasty, light and easy to digest. Come and try the pizza by the metre, Gennaro's speciality, which has won him numerous awards in the world's most important competitions, including first prize in the ‘Trofeo Caputo’ in 2004 and second prize in 2005.
