We can’t do that here so we have suppliers. Major one ships pallets to us from Puerto Rico. Chicken, some
beef, pastas, salt , flat breads, condiments etc. Another ships fresh scallops, sea bass and salmon by Fed ex from Florida. We have local lobster and conch suppliers who have traps ( our lobster supplier has 1400 traps and we are his biggest customer) and supply us fresh every couple of days. The steak comes vacuum packed from the USA through a local, supplier. The organisation is demanding to not have to say ducks off and yet sell fresh produce here, costs are eye watering. Much easier to do a restaurant in Landan. People think it’s easy.
